Why are there some website which require me to include "www" in the url for them to be found, despite the fact that the vast majority of urls work fine without it?

Just depends how the website has their DNS setup.
The 'right' way is to choose one or the other and have the other redirect to your choice.

The wrong way is to assume people will always access the site via www.* because most people wont type it nowadays

Having both isn't really bad, but then both will show up in your website statistics if you bother to run them.
