I just made this for dinner tonight for my gf and I.  It was really good, but I would definitely seperate the potatoes/sweet potatoes from the other veggies and cook them first for about 20 min before you add in the rest.  By the time they were done the peppers and onions were getting a little blackened.

Roasted Vegetables

Ingredients
 1 small butternut squash, cubed
2 red bell peppers, seeded and diced
1 sweet potato, peeled and cubed
 3 Yukon Gold potatoes, cubed
 1 red onion, quartered
 1 tablespoon chopped fresh thyme
 2 tablespoons chopped fresh rosemary
 1/4 cup olive oil
 2 tablespoons balsamic vinegar
salt and freshly ground black pepper

 Directions
1. Preheat oven to 475 degrees F (245 degrees C).
2. In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes. Separate the red onion quarters into pieces, and add them to the mixture.
3. In a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt, and pepper. Toss with vegetables until they are coated. Spread evenly on a large roasting pan.
4. Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.

Its time to make Anzac cookies  :D
This is an aussie recipe that i really like to make and they taste awesome.

You need:
1 cup rolled oats
1 cup plain flour
1 cup sugar
3/4 cup coconut
125g (4oz) butter
2 tablespoons golden syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water

Combine oats, sifted flour, sugar and coconut.

Combine butter and golden syrup, stir over gentle heat until melted.

Mix soda with boiling water and then add it to the melted butter mixture.

Stir it into the dry ingredients.

Place tablespoons of mixture on lightly greased oven trays (i use baking paper placed over the trays), allow room for spreading.

Cook at 150 degrees C (300 degrees F for the americans) for 20 mins.

If you like them chewy you should take them out at 20 mins mabey a bit before. Leave them in for about 5  mins longer if you like them crunchy.

Enjoy

Hey guys, I'm making fruit crepes for Mother's Day. I'm using pancake mix for the batter, but is there anything else I can add to it that will make it good. I need this fast (no duh). I have about 1 hour. Hope you guys come through for me!

Haha! I was wondering if anyone noticed that I randomly popped in after a decade.

Behold, I live, and I didn't fall into an open sewer (yet).

One packet of Ramen noodle soup (beef flavored) + one slice of pepper jack cheese (melted into the soup) = Amazing. Use the same amount of water recommended on the packet.

Another good one is one Ramen noodle soup packet (also beef flavored) + one slice of American/White cheese (also melted into the soup) + a few dill pickle slices (preferably high quality dill pickles, like Claussen) + fresh scallions from the backyard. Again, use the same amount of water recommended on the packet. Do not question the packet.

Ramen is love, Ramen is life
